Na₂S₂O₅ commercially produced salt of sulphurous acid, is a preservative used to extend the shelf life of meat products such as fresh sausages and burgers, even though it can have adverse effects on some people, especially asthmatics.Na₂S₂O₅ is not permitted in several countries for use in meat products. Chemically, Na₂S₂O₅ 67% sulphur dioxide (SO2). When SMBS is applied to a meat product, the Na₂S₂ reacts with water and, as a rule of thumb, around 50–55% added Na₂S₂O₅ can be found analytically in the meat product as SO2. Some SO2 is ‘lost’ as a result of countless reactions and cannot be detected any longer. Therefore meat products are not analysed with regard to their Na₂S₂O₅ content. The level of SO2 has to be measured instead and food standards refer to the SO2 level, rather than the Na₂S₂O level, of a product.

Sodium meta bi sulphate is produced by passing Sulphur Dioxide into a hot concentrated sodium hydroxide solution and saturated it .

*It is colourless Prismatic crystalline powder which may become yellowish on keeping.

Chemical property
*On heating it decomposes into sodium sulphide and Sulphur dioxide.

Pharmaceutical uses
* it is used in laboratory.
* it is powerful reducing agent .
*it is used and antioxidant in pharmaceutical preparation to stabilize injection containing salt, adrenaline, apomorphine.
* it is used as anti microbial preservative.
*It is also used in preparation of photographic develops .
* it is used an antichlor (after bleaching paper or cloth with chlorine).
Chemical incompatibility
Since it is reducing so it reduce halogen and paramagnet.

Storage condition
It should be kept in well closed container because it is a reducing agent.
